Tea testing starts with the perfect brew and make sure your palate is clean. Smelling the dried leaves first is a lovely way to start to understand what flavours and aromas you will find in your cup. Pour a few centimetres into your cup first, then swish it around. When you take a sip of your tea, breathe in at the same time, then breathe out through your nose while holding it in your mouth. Feel your palate, tongue, throat and stomach for their reactions with the drink.
